
I made these cookies last Saturday, and I really liked them. The original recipe used lemon zest, but my husband doesn’t like lemon in sweets, so I used the zest of a tangerine, and I’m really happy I did. These cookies have a tangy flavour that combines well with the walnuts, and a light, sandy texture.
Very easy to make, you don’t even have to roll the dough and use a cookie cutter - just roll small amounts of dough into balls and slightly flatten with the back of a fork.
You can serve the cookies with tea or coffee, or as dessert at the end of a meal, with some warm custard or chocolate ice-cream on the side. Enjoy!

Walnuts & tangerine meltaways
(makes about 35 small cookies)
115 gr unsalted butter, at room temperature (4 ounces, 1 stick)
60 gr light brown sugar (2.1 ounces)
65 gr self-raising flour (2.3 ounces)
50 gr rice flour (1.8 ounces)
50 gr walnuts, toasted and chopped finely (1.8 ounces)
grated zest of 1 tangerine
pinch of salt
- In a food processor, pulse the toasted walnuts until finely chopped.
- Cream butter and sugar with an electric mixer or wooden spoon until light and fluffy. Add the grated tangerine zest and mix well.
- Using a spatula or a wooden spoon stir in the walnuts, salt and the two flours just until combined. Don’t over-beat the dough (it makes the cookies tough), just mix until the flour is incorporated.
- Pour the dough over a piece of cling film, wrap well and refrigerate for 1 hour.
- Preheat the oven to 180° C (350° F) and line a baking tray with parchment paper. Break off small amounts of dough (about 1 teaspoon) and roll into balls. Place them on the lined baking tray, and flatten them lightly with the back of a fork.
- Bake for about 10-12 minutes until slightly golden around the edges. Let cool for 5 minutes on the tray, than using a spatula or palette knife lift the cookies and place them on a rack to cool completely.
- Store in a tin box or airtight container for 4-5 days.

Yum! They’re delicious!! I love the smell of tangerine, so I baked them last night. Everybody loved them, I’ll have to make a new batch soon!

You really need to stop this Cristina because I’m drooling all over the laptop again and I’m tempted to lay waste to my waistline. These are yumcious! Oh well, there goes the diet for another year.
John, I love the word yumcious. Yes I know that all the treats I blog about are very dangerous for the waistline…moderation is the key. And since I’m not good at restraining myself, I keep 3-4 biscuits for me, and give the rest to my husband’s colleagues, or friends and neighbours
